What is it for:

Refermentation:

Autoclaves are used to carry out the refermentation of the base wine. In the Charmat method, the wine is transferred to the autoclave, and a mixture of sugar and yeast is added to start the second fermentation. This creates the carbon dioxide bubbles responsible for sparkling wine's effervescence.

Preservation of Aromatic Characteristics:

The use of autoclaves can help preserve the aromatic characteristics of wines, as the process is faster and takes place under controlled conditions.

How it works:

Base Wine Transfer:

After initial fermentation, the base wine is transferred to the autoclave.

Addition of Yeast and Sugar:

The autoclave is sealed and the yeast and sugar mixture is added to the base wine. This starts the second fermentation.

Pressurization and Fermentation:

The autoclave is pressurized to keep the carbon dioxide produced during fermentation dissolved in the wine. Pressure also speeds up the process.

Temperature and Time Control:

Temperature and time are carefully controlled to ensure that refermentation occurs in a controlled and efficient manner.

Filtering and Bottling:

After the second fermentation is complete, the sparkling wine goes through a filtration process to remove dead yeast and other sediment. The wine is then bottled.
This approach, known as the "Charmat method" or "tank method", is an alternative to the traditional method of producing sparkling wines, called the "traditional method" or "classic method", in which the second fermentation takes place directly in the bottle.
